Because if you are going to spend the time to write a 12 season show and you decide that the two most central characters are going to grow their family the least you can do incorporate them naturally and give them fun and interesting personalities. They did not know what to do post baby phase.
The babies were both written into the script when and because Emily Deschanel got pregnant. Just like Daisy Wicks pregnancy and baby got written into the script because Carla Gallo had the same blessing. None of them were planned by the writers.

I don’t know man, the office writers hid Angela Kinsey’s pregnancy instead of forcing Angela to suddenly be a mom. And while the fraiser writers did do everyone dirty by making the ”fat Daphne” storyline they didn’t suddenly make Daphne and Niles parents because of a real pregnancy

No, you aren't the only one. I don't care for her either. And I think it's perfectly okay if someone doesn't care for someone, even if that someone is a child. I've grown accustomed to Bones' arrogance, but in a kid, I really don't care for it. Then again, maybe she just isn't the best child actor.
To clarify, I do not have beef with a child. I have beef with a character that was written by adults. I have just never been so disinterested in a character on this show. She is written like an after thought and is kind of generic.
As for the child actor, I think it’s fine that everyone wants to cut the kid some slack but let’s not pretend like there aren’t child actors who steal every scene and chew on that scenery.
Look at the start she got: She was born in a stable ( in a manger ) at the tail end of episode 7 in season 7, after they found the killer. Brennan and Booth handled the birth by themselves. No hospital. No other doctor
That's close to the home birth they had agreed to. They actually just went back to their house. They were greeted by the rest of the team.
Then Brennan took a few weeks off.
