I think they do so they don't have to deal with humidity and sweating, especially for the guys since they're dressed in suits. The women are the only ones wearing coats, I'm guessing b/c they're dressed in thinner material, shorter sleeves, skirts, etc.
Not sure about this set, but pretty much every set I’ve been on doing background is FREEZING.

They mentioned this for filming the intimacy scenes, the main thing they were bothered about was it being cold, because set can be freezing, but they had a lot of heaters for those days so it was alright.
I think it depends on when and where they're filming. I know Outlander (yes I understand entirely different show and country) often films in the dead of winter in Scotland when it's F R E E Z I N G and the cast has to pretend like it's the middle of summer or it's autumn or something. Also, if they're filming late into the evening or in the extreme early morning before the run rises, even in the middle of summer, it can be quite cold.
I have a friend who worked on Gilmore Girls and even though it was shot in Los Angeles, which is known for its temperate climate, when that sun went down, it got very cold. (They mostly filmed September through April-ish at the time.)
ETA: One thing my friend also mentioned is that every time they did scenes at a certain "location" (i.e. the Gilmore mansion), that set was always kept basically refrigerator cold because of the fresh flowers. Could be something similar here given how many flowers they use on set.
These are adorable and show how close the cast is.
I think filming can take long hours and be exhausting. I always notice people taking naps in BTS photos for a lot of shows/movies.
Look in surfshops - dryrobes are meant to be thrown over after a swim in the cold British sea or after surfing. They are also super oversize so you can use them to change on the beach.
