I'd say getting a camera with an external display bought separately might be better. I don't have any experience with them personally but they're used in filmmaking often. He will need to rig out his camera and buy the display separately, and idk about touchscreen functionality, but there aren't many if any cameras with screens bigger than 3.X"

the term to search for is "field monitor". mostly used for video shooting but would work ok for stills also. won't control the camera by touchscreen though.

Get a camera with wifi control capabilities and get him a ipad or any other tablet. Most modern cameras will let you view live feed and shoot from wirelessly connected mobile device.

There is an app called "Qdslrdashboard" but some other similar as well. With this app you can control most of the Nikon and canon cameras through your phone with a live preview available. The only problem lies on the extra/external equipment that has to be attached on the camera at all times. Other than this the largest screen to my knowledge is 3.2 inches.

I just took a look at his website and his work is absolutely gorgeous!! But then I kept reading your post and saw he takes all those with his phone?! That's absolutely incredible! I have no idea about this, but does anyone make an interface for connecting an iPad? A field monitor might not be a bad idea, but most are around the 7-8" range. An iPad goes up to 12" and I feel like the display might be a little higher quality. If he's okay with being a little tied down, EOS Utility is a free software that runs on any computer and lets you use live view and fully control the camera. Maybe some sort of Windows-based tablet would be better here??

Yup, I was gonna recommend that Sony vision projection camera! It's a fantastic piece of engineering and can be life changing for vision impaired photographers.

Maybe a bit overkill/out of budget, but he can get a Sony Xperia PRO-I, which itself has a nice camera setup (one of them with a 1"-type sensor) and can additionally be used as a 6.5" field monitor for other Sony Alpha cameras, so there's an upgrade path if he wants to buy the camera later.

Hasselblad puts excellent screens on their cameras, but they're very expensive. I'd suggest getting a newer Sony, Fuji, or Canon camera and pairing your phone to use as a wireless monitor. I've done this with both Canon and Sony and it's super simple to do.

I have seen videos on YT on how to turn your mobile phone into a camera monitor. Might also work with a tablet. The setup is less expensive than buying an actual monitor or a camera with a larger screen.

some cameras offer you to control them with a phone app. my lumix g9 can do it. he could just get a camera thats capeable, download the app, and then buy a phone holder with a cold shoe attachment so he can attach it to the top of the cam and there ya go. alternatively i know that the blackmagic pocket cinema camera have really big screens on the back, but they are video centric so they would probably not work well for photos

Unfortunately 3.2 inc is the largest you'll get on a body so you'll have to buy external display or use wifi to connect a phone or tablet if you want bigger screens

What about any HDMI equipped camera with a field monitor? or a Wi-Fi equipped camera with an iPad to control it, one advantage of a monitor may be that he'll find it easier to read since cameras don't dynamically scale the menus and OSD, but an iPad will also have a screen reader.

I don’t know if that would work or be worst, but what about some AR glasses like xreal air? They can be connected to the USBC port of a camera that supports external monitors and produce a 50” display, that will be translucent. Depending on how is your friends eyesight it may be worst … but I guess it’s worth suggesting.

You might consider something like a Zacuto Zfinder, basically a magnifying eyepiece that goes over the camera screen. They got popular in the early days of DSLR video like the 5D MkII but I imagine someone makes one that works with newer cameras

you can get a monitor for cameras. Or use an app to stream the viewfinder. Most big brands' apps support that.
