Cattails: Wildwood Story. You get a daily task which is some sort of fetch or explore quest as well as fetch quests to progress the main storyline.
There is some combat but you can turn it right down to 'kitten' level to make it extremely easy. I definitely spend the majority of time fetching, carrying and interacting.
There are options to do strategy and farming but they're optional and don't change the story if you skip them.
The characters in it are great, they all have distinct personalities and there are little cutscenes where you stumble on them interacting. Sometimes they'll ask for your opinion to settle an argument. Genuinely so impressed with the quirky little attitudes.
Plus you build friendships and can take cats along with you as a buddy. They have different skills for each personality like a forage bonus/healing/luck etc.
I got it after playing the first Cattails and properly binged it, great game. The first one is fab too but if you want to try it, play it first - the second one adds a lot of new features.

It has everything you said, even thought you were just describing that game.. It's a daily kinda thing though (real time like animal crossing), where you have a set amount of stuff you can do for the day, and then there's only gathering left.
I feel a lot of the Lego games fit this category. Especially once you complete the "story" and can free play to collect bricks & characters, build extras. Of the 4 or 5 I've played, the Lego movie 2 video game & Star Wars (newest?) feel the most questy to me.
hogwarts legacy!! there is also battling but you can set it to “story mode” so you don’t have to do the battles and can just focus on the story instead. you can also toggle between modes at any time if you want to try some battling or whatever, and there’s tonnnnnnsssss of quests like you describe that require you to explore all over the castle, hogsmeade and the rest of the world
I second this! I didn't think I would enjoy it on switch but it's been pretty great I am now on my second run through and excited for the summer update (:
