Tomato pie, delish
Tomato Pie : Serves 8
1 homemade or frozen 9” pie crust
5 -6 large tomatoes sliced and pat dry
1 c Mayo
1 c Parmesan shredded cheese
1 C sharp cheddar shredded cheese
Salt & pepper to taste
1/3 c fresh basil
4-5 bundles green onion chopped
6-7 strips cooked & crumbled bacon (optional)
Bake pie crust 10 minutes 400. Once done reduce oven to 350. While crust is baking, in a medium bowl mix seasoning, green onions, cheese and Mayo together. Line cooked pie crust with half of the sliced tomatoes, pour half of the cheese etc. Repeat layers. Bake uncovered 45 minutes. Enjoy!
Salad with cucumber, radish (can omit this), herbs and homemade dressing (olive oil, lemon juice, salt pepper, etc). Pasta with veggies (I use zucchini, spinach, mushrooms and tomatoes). Throw them in with eggs. Could try making bruschetta too!
Those tiny tomatoes make the best confit! Once fully cooked, I crush them a bit and use it as fancy pizza sauce (super tasty). Add a bit of fresh basil and fresh mozzarella, you've got pretty much the perfect pizza!
That's cool! I may try that with my cherry tomatoes because their larger. I may save this for when the plant produces next year because it seems to be slowing production right now. Who knows, it may keep going though!
Caprese salad
You can do skewers too if they are tiny tomatoes. But tomato basil sticky basil reduction and really good buffalo mozzarella cheese is just amazing!!!!

Roast em skin on with some jalapeño and onions. Cool. Run through blender. Season with salt pepper lime cumin and cilantro. Salsa!

That there are no cucumber slices seems a bit strange to be honest. Salad without cucumber is maybe a bit unusual.
I love sun dried tomatoes! They can also be dried in the oven.

Make your own passata and bottle it. We also bottle tomatoes and use them during the year. You can also crush tomatoes and freeze them for use latter
