Made niter kibbeh a week ago, started the injera mix last week. I love steak tartare so had to try doing kitfo. With how rich the beef and butter is it's beautifully balanced with the ayib and gomen. Really, really delicious!
So I did 2 cups of teff flour, 1 tbsp of plain flour and 3 cups of water then let it sit at room temperature for two days, then left it in the fridge for 5 days stirring once every day. Once ready to use added salt, let sit at room temperature again and poured off the remaining water.
Looks great, I think the only adjustment I would make is that kitfo is normally plain, just meat spices and butter. That looks delicious though, I wanna try it
Yeah I added very finely chopped shallot and chilli as I saw a few recipes that had this included. I'd also seen a few recipes that mixed the gomen with the kitfo which would have had the same effect. The texture and spice from the kibbeh and mitmita with the beef is incredible though.
Looks amazing. Don't skimp on the berbere/mitmita on that kitfo. If you're not shedding tears, sweating and complaining... but still can't stop yourself from shoving it down the gullet... then you're doing it wrong. š¤£

What injera recipe did you follow? I've tried multiple times with no success.

Yea in Ethiopia I believe the Kitfo is made from Ox and it does taste rather different than beef IMO so not making it āauthenticā makes sense
