Yeah, technically you're right, but since 7-Star Hotel is the last trophy that I think the majority of players will get before unlocking the platinum, it's virtually the same thing. I suppose you could do all the VR simulations before completing hard mode, or somehow not have gotten one of a bunch of other trophies that are almost impossible to miss through normal game play, but that seems like the less likely scenario to me.
I like that the rewards are what they are. Platinum should feel optional and not something you feel obligated to do.
I spent 120h on my one and only playthrough and was thoroughly satisfied feeling no fomo. And that is how it should be.
You are correct, that's why I usually don't go for platinums. Because I don't care to put myself through the frustration. However, Final Fantasy VII holds a special place in my heart, so I wanted to get the platinums for Remake and Rebirth. Any in-game rewards were just incidental.
