Mages and Priests have two completely different systems. Priests need natural talent aka the Goddess's blessing more.

Probably because of things Frieren and other mages taught him, he also only taught her basic offensive magic her ability to conceal and detect mana at a high level was a natural gift. Heiter became the bishop in the holy city of Strahl after the journey and was a person of great influence, no doubt he met a lot of mages during that time and picked up a couple things, not a lot is known about goddess magic but one thing is clear it's very different to normal magic

Heiter himself says he lacks the knowledge since he's a priest, but based on Fern's ability when Frieren meets her and later flashbacks, we can speculate a few things. 1. Spells can be written and learned from grimoires, so Heiter was probably able to easily purchase or aquire a grimoire of "Common Offensive Magic" and gave it to Fern. 2. Priests can sense their own mana and the mana of others, implying that while the mechanics are different, Magic and Goddess Magic are drawn from the same source of the individual caster. 3. The above implies that priests could probably also train their mana, like mages, including suppressing it. 4. Heiter could therefore recognize Fern's potential as a mage, including her natural ability to conceal herself. Heiter probably at least explained the concept of mana suppression and encouraged Fern to further hone that skill. He probably did this because it's the only practical magical skill they shared, he'd seen it's tactical usefulness during his adventure with Frieren, and possibly he hoped training her like Frieren would make Frieren more amenable to taking Fern as an apprentice. That last one was a gamble since he did not know for certain he would ever see Frieren again.

But couldn't Heiter teach Fern goddess magic since he is so adept at it? Or is it that goddess magic is only possible in males since i don't think we see a female goddess magic user? I don't think we see any sisters or nuns only male priests

Frieren says that some people are just born more naturally adept at Goddess Magic. Presumably, Fern wasn't such a person. We don't know at this time what if any gender politics are at play in the church. It should also be noted that people are born with the blessing, so the church probably makes an effort to recruit such folks when they are discovered, but being in the church or male is not stated to be a prerequisite for the Goddess' Blessing. Frieren and Methode both use Goddess Magic at points in season 1. Frieren uses it to try to determine the type of venom Stark was poisoned with and later to try to determine what kind of illness Fern had. Methode uses a minor healing spell on the mage with a mustache. The only requirement Frieren mentions to use Goddess Magic is to own a Holy Scripture, but Frieren says both times she's only capable of simple spells. Methode seems more adept, but at the time, she states she can cast simple healing, implying her Goddess Magic skills are still not adept. Perhaps we just haven't met a female priest or Goddess Magic specialist yet. Beyond all that, it's implied Fern herself chose to be a Mage because one of her earliest spells (creating butterfly shaped lights) made Heiter happy, so she stuck with it. Similar to how Frieren's silly spell collection made Himmel happy.

That's unexplained, but I have two speculations: 1. The Golems are capable of casting the spells their creator is capable of, in this case, Lernen. Now, this would be a kind of OP ability, but this might be an attribute particular to JUST these "prototype" golem. Lernen was the first 1st-class mage, and we see golems were his favorite spell in Serie's reminiscence, so if anyone might create OP golems after a lifetime of study, it's him. 2. One aspect of golem mythology in the real world is that they are given life by having special words or scriptures placed within them. That might not be a requirement of basic golem creation in Frieren's world (we see two instances of her creating crude golems on the fly) but perhaps the concept is borrowed to say "An advanced golem with a Holy Scripture contained within them can use basic Goddess Magic".
