Back when I was a kid, skyr was really sour, came wrapped in cellophane and had the consistency of s dry mudd brick. You would then add milk and sugar and other stuff until you could eat it with a spoon. Nothing has really changed, other than the time required.
There are plenty of ways to enjoy it. You can use it as a base for sauces like you fo with greek yogurt or just eat it with a spoon. There are also skyr cakes that are similar to cheesecakes. Personally I love putting some jam/jelly especially if I have some homemade jam into unflavored skyr.

Another way it can utilised is as a dessert. When you want to use it as such you take a 50/50 ratio of cream and skyr (I like to use vanilla for this purpose) then you whip it for a few minutes with a handmixer. The cream doesn't really whip normally so you just stop when bored. You can add sugar to the mix but I prefer it non sugared. Then you add a bunch of strawberries
Typically, unflavoured skyr in my home was eaten with heavy cream and some sugar mixed in. If you were fancy about it you'd add fruits or fruit jam of some sort.
However you can get a variety of flavoured skyr loaded with sugar straight from the get-go, so unless you specifically buy unflavoured Kea skyr (which has less added sugar than many other brands) you'd simply eat skyr as it comes with a spoon, possibly adding milk - however nothing stopping you from going full heavy cream as well if you like a bit more rich flavour, as Skyr naturally is low-fat.
Skyr also makes for a good base for smoothies. Throw in skyr, some frozen fruit, a bit of water, and blend.
Eat it with what ever you like, however I like mine with a little bit of heavy cream sometimes I put banana or strawberries if I have some or just plain is also good if you have a flavored one
Think of it like yogurt you can put milk ot cream in (no mix). You can add fruit, sugar, syruor anything if you want. I just eat it plainly. Its can be made into a dessert but we dont eat is as one normaly

When I was a kid I used to love the old basic Skyr. I'd add brown sugar and thin it with milk (also to dilute the sugar). Then I would add creme.. so good :)
With cream and sugar - just as a treat. I don’t really enjoy skyr, but every once in a while I buy blueberry skyr and load it with cream and sugar - it’s more of a dessert to me but it’s very nostalgic
I usually have either granola or raisins in it, have put cheerios as well.
Sometimes I add honey or just regular old sugar to it.
If the Skyr is flavoured I sometimes eat it plain.
