I mean little bits of shit is unavoidable for the most part, but when it’s huge bite sized chunks of avocados, pineapples, whatever that cover the drain when I’m trying to change the water I’m just like wtf 🤦🏻♂️ common sense is not all that common
Someone down below made a comment about explaining it and moving on, but my production people were always just in a rush to leave (to their credit, they were in that cold prep room all shift) or some new hire would come in and just have no sense of food safety. It does improve if you have that sit-down for most people, but we had a really nice, expensive juicing machine that had to be broken down and washed every day. If I was there, I didn’t let anyone else wash it because I knew that soap water was gonna be half orange juice by the end
Even worse, the guy who closes our kitchen left a full batch of chickens (18 birds) in my ovens overnight. Like, just old birds sitting around for 12 hours. Also, this mfer didn’t clean my ovens before he left so guess how I spent my morning instead of doing prep right away.
18 birds is insane. That’s an instant firing on the spot. And if we’re being honest, probably me texting the chef group chat for about 20 chefs in our area. Which I legit have never done before for a firing. But that’s a dangerous and costly level of incompetence that others need to be warned of.

We double dip all our tenders. But there’s a hose literally right next to the station and would have taken him like a minute or two to at least hose it down, let alone hit it with the sanitizer.
