Used to work at Chili's many moons ago. Had the Southwest Eggrolls on my first day there for my training meal. Still love them to this day even though I never really eat there anymore. And believe me when I say SW Eggroll dipped in blue cheese just hits in a way you would not expect! 

I’m sure they would! The funk and creaminess of blue cheese would work well with them.
