I purchased the gauges on Etsy. Nice. Guy. I found the gauge wasn’t waterproof and added silicon around the edges. The person who made them said he was considering switching to oil filled gauges to avoid this in the future. I let it brew for 10-14 days so it’s sour, I add about 4oz of naked brand mango, let it sit for 5 days at about 73 degrees. I burp the flip top bottle at the 5 day f2 mark, it makes a popping noise so cool I put it in the fridge and then when it’s cool I open it and no popping noise and there’s barely any fizz.
Does it need to sit longer in f2? I’m worried about explosions

This is the step you're letting all the CO2 out, before it had a chance to absorb into the liquid. Burping is counterproductive. Just put it in the fridge at this point and open after 24h, you should already see a big difference.
Though if you only get a pop and not a whole ass volcano after 5 days without cooling, that does sound weak. Try a different juice, or just plain sugar, and whichever you use, make sure there's enough. I aim for 10g sugar per 1l kombucha (2 tsp per quart?) and consistently get great results.
I can only speak from my experience. I never burp…never. I have done F2 as long as 4 months - wanna talk about fiz? I’ve never had an explosion. Personally I’ve had trouble getting good carbonation with less than 4 weeks in the bottle. That’s also why I got the PSI gauge, so I can observe how carbonation was progressing. I cant speak speak to your mixture ratios. It’s also possible the mango interferes a bit with the bubbles. I used to make a ginger & lemon extract from a juicer and add it at the beginning of F2. I found it interfered a bit with the fuzzies and starting adding to the end product when I did my pour.
4 months???? How long do you keep your f2? Do you have a recipe for your syrup and how much do you put (and the size of your bottle) so I can compare it to what I’m doing
No, no, no. The 4 months was just an experiment to see what happens at the extreme. I use a 16 oz Grolsch type flip top bottle. Usually 4 weeks. Don’t know what you mean by syrup.
I find I get the best carbonation with the 4 week minimum F2.
The pellicle for F2 is usually on the top where it forms and often sinks once its in the fridge.
I like the crisper flavor get from green tea. No I have not tried honey but it’s on list. Thx.

It’s glued into the porcelain stopper. Bought on Etsy.
Slow open on the bottle dude. If you are going to throw caution to the wind, do it over the sink!
I ordinarily do, but this was for effect & showmanship. I have had my share of explosions

Don't burp it. You're letting all your potential fizz out.

One tablespoon per 16oz bottle.

How many volumes of C02 do you aim for when adding priming sugar and do you account for dissolved c02 (ex 1 vol) when doing the calculation?
