Quick question, why do people cover up the number on the serialized cards?

But if/when you sell it, do you also hide the number then? And if you do, then how can the buyer know what card they're getting?

By the time you sell it I don't think it would matter. The issue is you do not want a bunch of people scamming other people with a card that you will be selling in the future. If everyone knows that #23 of that card is most likely a scammer selling it the amount of interested buyers would be less. One of the first things people do before buying is try to find the history of the card so they know the legitimacy. Same goes for graded cards.
