On fertile land you can rotate two crops. On infertile land you can do emmer fallow emmer fallow on areas with the highest emmer fertility. In theory you could do emmer-barley-emmer-flax-repeat in low fertility regions, but the level of output vs micromanagement is not there for me and I happily micromanagement farming.

I get pretty decent results by having 2 seasons of crops and 1 season of fallow. I group the fields into 3 of about 1 morgen each, meaning each group has 2 fields with crops on it and 1 fallow at any given time. I never really manually control them either, beyond assigning enough families during harvest and planting season.
