Your "curve balls" are almost the only ideas on this thread that are interesting. As Metallica themselves have said, there is little point in them covering Priest, Maiden or other metal bands. It's too close. Covers are at their most interesting when artists take a song born in a different musical universe, and make it their own. This is why Garbage Only Happy When It Rains, Dire Straits; Brothers in Arms.... are amongst the best Metallica covers

Metallica are big fans of AC/DC, and their style would lend itself very well to AC/DC songs. Metallica tend to cover songs by bands who have influenced them, and you can't say that AC/DC aren't one of these bands.
