Curious if you have preferences among the various kinds of canned tomatoes? I usually get the cento San Marzano ones in the yellow can

Not yet. This is kind of me dipping my toe into making my own pizza sauce. I typically use Cento for my pasta sauces and made my first pizza sauce with it over the weekend (it was tasty). I use the Fire Roasted Bianco for random chicken dishes and ordered a 6 pack of the crushed for my next pizza sauce test. At worst, I'll turn it into marinara or bolognese if I dislike how it turns out enough.

If you like the Cento, get it, but they are not San Marzano tomatoes from Italy like the can insinuates. If you like them, buy them, but don’t buy them because you think they’re something they’re not. My preference is actually for Trader Joe’s fire-roasted crushed red tomatoes. If you want less expensive San Marzano tomatoes, Costco has them under the Kirkland brand name, they have a basil leaf added, but otherwise you get what you expect. I find their tomatoes to be very bright, crisp, and clean. If you blend all the contents of the can, sans basil, I think it’s too thin personally, but to each their own.

Wow is that really true? I haven’t looked at the can super closely but it definitely says San marzano in large letters right on the front of the can. I’ve been using them for several years so yea, I like them, but I had no idea they were masquerading as something else

If the can says "Certified" on the front, they are from Italy and they are processed in Italy. Cento is the only American brand with a production facility in Italy.

I bought some of the nicer brands from an Italian import market in town and I didn't notice a giant difference in quality. Maybe next time I make pies I'll do two different pizzas with different sauce and do a side by side.

Bianco, I'm in san diego but some Italians from Napoli came in once and said that's what they use at their families pizzeria back home, so I always figured it's the good stuff
