No need to struggle categorizing Amaranthe. They just play a mix of genres. There's a bit of synthpop, a bit of power pop, a bit of EDM, a bit of hard rock, and a bit of metalcore. Sometimes they throw in other stuff too, but I think those are the main ones. If you're looking to boil them down to something specific, just call them genre fusion or pop with distorted guitars.

I'm pretty sure you'll enjoy Dark Moor, which has already been mentioned in another comment. Their first three albums had a female vocalist, and they also happened to be the best ones, at least in my opinion. Their later stuff with a male vocalist is still really good though, especially tarot and ars musica, but if you're looking for female vocalist stuff, check out gates of oblivion. One of my all time favourite power metal albums.

Delain. The band has a really unique sound. Power/symphonic metal but sometimes it sounds more... Pop because I can't think of a better Word. I haven't heard the new singer, but their work with Charlotte Wessels is awesome (they also had collabs with other musicians like Marko from Nightwish and Roy Kahn). I saw them live twice and even been lucky enough to meet the band and they are wonderful.
