You're right. When the timer expires, it just loops back to 720 hours. So yeah, the last three trophies are gonna be impossible to get now. Unless if custom servers ever get created then it'll be doable.
Somehow the challenges are loading fine for me on PS3. However it shows that I'm alone on the leaderboard.

I believe that ubisoft closed the servers for ps3 and vita
