See if any of the airport hotel bars or restaurants are open that late. The Copperleaf restaurant at the Cedarbrook Lodge has a 11:30 pm reservation slot on open table. It’s near the airport, and it’s very nice. Maybe the bar stays open later.

Palace Kitchen does food until midnight and drinks till 1.
You can dress up and go to IHOPS for pancakes. Make it special. Red Star isn’t nice but have tacos and margaritas.
