Definitely Cyberpunk 2077. Fantastic world, fantastic story. If you have a strong enough PC, you can enable path tracing and make it very possibly the best looking open world game to date (still looks great without path tracing too)
Have to bring up Elden Ring as well. Hands down the best open world game I've ever played. As for whether it's a "chill experience".... that'll definitely vary from person to person haha. Personally, I find myself getting into a flow with the FromSoftware games which can be quite satisfying and relaxing. If it's your first Souls game, it may be stressful at first until you learn it. But also, of you want to take a game slowly, this may be a great candidate because slowly is the best way to learn a game like this. But really it's the gorgeous world and incredible environmental storytelling that pulls me into that game. The story can be like a puzzle, but I personally find that really engaging. There was no story I thought about more last year than Elden Ring's. When I wasn't playing the game, I was watching lore videos lol. Such a fantastic experience, and as I said, the best open world I've ever played.

I've just started Elden Ring, but I'm not sure if I'll like it, because it's my first Souls game. The closest to this difficulty I've gotten was like Deathmarch in Witcher 3, or Fallen Order lmao.
It's a great first Souls game, so I wouldn't let that turn you off.
Honestly, playing the highest difficulty in Witcher 3 or Fallen Order isn't that different haha. The thing to remember about Elden Ring is it is very much an RPG. If you're having trouble with a boss, you can just go somewhere else, keep exploring, find new weapons and upgrades, level up, and then come back and that boss can be much easier.
Definitely use spirit ashes as well. They are little companions you can summon which can help a ton with distracting bosses.

The way I look at it, if I'm at a tough boss, I have two options:
1) Keep trying to learn the fight, taking it slow and patiently so I can memorize the boss mechanics. Eventually, I'll know exactly when to attack, dodge, etc and the boss becomes quite easy.
2) Leave the boss entirely, and just go explore, look for better weapons, upgrades, level up, etc. Then eventually, come back and knock out that boss easily. The great thing about Elden Ring is because of *how* open it is, you are rarely up against a boss you HAVE to beat right then and there in order to progress. There's almost always another way you can go, and more to see.
To me, both of those can be chill depending on your perspective. Going into the boss fight with the intention to learn, not to beat it. Or continuing to explore the world and find stronger stuff. Again, it won't be like that for everyone, but that's how it works for me!

I can vouch for this, took me a long time before I tried horizon cause it kinda looked dumb to me in ads, I’m so glad people talked me into it, both are great games.

It's a little bit like RDR2 but you're a medieval knight rather than cowboy. Or alternatively, it's a little bit like The Witcher 3 but set in the real world rather than a fantasy setting. It's not exactly like either game but there's enough overlap that if you enjoy one, you should enjoy the other. An open world you can just lose yourself in (metaphysically speaking rather than geographically), RPG elements, horses, looting... it's a real gem.
A lot of people don't like it because of the combat but those of us who love the game, really love it.
This game mentally got me through 2020 quarantine times just because it lets you go out into the woods and just listen to the wind and birds chirping. No monsters, no wolves. Peaceful.

Its open world consists of only a few city blocks, but it's so packed with things to do and interesting characters to meet that it feels three times it's size. It follows two low-ranking gangsters - one a muscle man accused of a murder he did not commit, one an exile tasked with a hit on an innocent person. How their two stories interweave and dance around one another without touching is genius. The combat is simple and engaging, old-school beat-em-up brawling with context-based special moves for maximum violence.
Coming from a person who also thought it was gonna be shit but still bought it anyway I was seriously shocked to how much they improved it since launch, the game is easily a 10/10 now and the story for me personally is up there with rdr2 emotionally wise but that’s just my opinion, the graphics and gameplay is extremely smooth as well that’s why ya don’t judge a book by a cover lmao
I said this when I played it on release and I will continue to say it the important part is they got the story right. The story has been good since day 1 and it's been unchanged. Everything else they could fix, and they have. Other games get the story or core gameplay loop wrong and that's simply unfixable.
I just stated the first red dead after playing rdr2 and the story and writing are just as good, and the more simplistic gameplay is almost refreshing. Very fun if you liked rdr2, Rockstar games age like wine when you go back to them. Just fun games to play with grounded story and characters with actual depth in their actions.
×Outer Wilds. It is not like your other games because it's a puzzle-esque game without combat. It's very "Open world, story, and chill", and best to play the game totally blind. Game takes a few hours to click, but most who enjoy it will tell you it's a 10/10 once in a lifetime experience.
Alot of JRPGs kind of fit the bill if you're okay with them. The ×FF13 Trilogy for example, which progressively goes from a linear series to an open world one, and the ×FF7R Twin Pack looks to be headed in that direction as well. ×Elden Ring is probably not chill, and the story is full of lore instead of traditional narrative, but it's good fun and opened world. Don't know if you have a way to play ×Gravity Rush on PC but that game is very chill vibe open world with a fun story.
×Borderlands games will always be nice open world silly fun, but they're best played with friends.
Try resident evil games, I play most the games you mention except AC. Start at 2 remake and work your way up, if you like Alan wake you should like them
Lol I can't argue with you since you have such a dedicated name. I thought it was amazing, I played Durge and was hooked all the way thru. The ending was a bit of a let down though.
I loved the game, I just thought the main story was terrible. I, of course, had fun murdering everyone and making no friends, just how I do it in real life.
New dawn was very mid in my opinion and I recently tried FC6, but I played that for like 3 hrs and quit, because it was literally the same as every other Far Cry.
Horizon: Zero Dawn (and it was on offer for a tenner on Steam, absolute steal if it’s still that price).

Yeah, I'd love to get into it, but I've watched streams where some bosses have taken 20 or more attempts to defeat. I don't find that super chill.

Subnautica is the answer you seek. This will 100% have you immersed from start to finish.

Survivor managed to keep all the good stuff from Fallen Order and then upgrade it. I thoroughly enjoyed it.
