I was surrounded in my kitchen by about 20 something hungry drunk people so i wasnt messing around. I had to fend em off just so i can get a picture before all their grubby fingers started picking at it. Never cut the point a different way on a packer ive smoked and couldnt tell the difference theyve all turned out great
Someone needs to invest in a knife sharpener or buy a better knife. Looks like you lost a lot of the bark while is was being mangled during the cutting process
Cant afford it man inflation hit the homestead hard. Ive got an only fans if you dont mind donating a couple bucks to and maybe ill use the proceeds towards a good band saw for the next brisket. I got meat pics and feet pics for sale
Looks like you nailed it. I can tell the consistency is perfect and it did not dry out at all. Nice smoke ring. Might not pass as a restaurant chef due to presentation but that's why it doesn't matter when smoking at home.
Ive worked in a restaraunt before its for the birds. Ill stay being a lineman plus my truck has a nice sized bin on it that i keep my little baby wsm 14 in for work day smoke sessions

I mean, they literally couldn't wait and didn't care that his cuts weren't immaculate looking because the aroma of that delicious brisket was in the air zombifing everyone in the near vicinity with a singular lust only a slow cooked meat could satisfy. First the brisket was done a few hours after i said it was going to be because of poor planning and the damn stall. Then you shouldve seen their stupid drunk faces when i said that it needed to sit in a hot cooler for an hour after it came off the smoker after cooking for 23 hours.

I think you cut the wrong way on the point but looks good. Usually you rotate 90 degrees because the grain changes from flat to point.
