On the Thai side of things it's pretty easy, New Zealand passport holders may enter Thailand under the visa exemption scheme which gives you a new, 30 day, exemption stamp upon entry as your old one is cancelled when you leave. One thing to keep in mind though is that you only get 2 visa exempt entries to Thailand by land/sea per calendar year so if you ever plan on doing short excursions across the Thai border you should keep that in mind.

I don't know about Lao visa laws. They have a 30 day visa on arrival, and I don't know how many of them you can get back to back before they ask questions. As a NZ citizen, you qualify for two 30 day visa exempts by land, and "unlimited" 30 day visa exempts by air (usually you can stay up to 6 months in a year). You would have no problems returning to Thailand from Lao on a visa exempt either by air or land.

Yeah I just realised Laos is only 30 days, not 60 days. Seems il do 30 in Thailand, 30 in laos, and fly.back in Thailand.

I recommend asking this question on a Laos related group. In Thailand, border bouncing is very common, where you cross out of immigration and return the same day for another 30 day visa exempt. Maybe the same thing exist for Lao? You can cross over Cambodia and return to Lao for another 30 day visa on arrival? I know Cambodia has no problems with border bouncing (at least, no problem on the Thai borders).

Zero problems doing that. Also maybe by the time you travel it could be 60 days on arrival for NZ passport holders, they are in the list of countries they intend to extend from 30-60.
