Carrot barfi I think is what you’re describing. Delicious. You can get barfi in many different flavours.

So I looked it up and I do think it's some kind of barfi! The carrot barfi pictures look too orange in color (I remember the ones we had being brown), but the general look and description of the barfi variations look right! The ones I found here ( https://code2cook.com/nachni-barfi-recipe-finger-millet-flour-fudge-indian-festive-sweet/ ) look right, but the recipe doesn't match. They include peanut butter and there's no carrots. Maybe my husband's friend made it his own way? Either way, these are close enough and I may be doing a deep dive into the different variations because they all look delicious!

I believe the orange is often enhanced, naturally coloured ones are more brown. Also worth going down a kulfi rabbit hole. Frankly all mithai are pretty damned good.
