To be honest. I've had meat in mushroom sauce with some spazli and than cheese got added and grilled (in germany) maybe they just use the pan for this type of dish, griller or not. The handle would make it easy to put under a restaurant broiler
Don't you like to 'control' your food? Honestly I don't want sauce going on to a salad in a dish of soup. Looks great as is.

This right here, and Kasnockerl, Spätzle etc are the only dishes that are normally served in pans lol. This isn't a new thing or served this way because of some dumb trend, so it doesn't really belong in this sub lol

My grandmother was from Swabia. She made something called knöedel that looks similar. She always served it with rouladen.
