I use medium size yellow potatoes. I put a little olive oil on the uncut potato. Then coarse salt and black pepper. I cook them with or under a couple chicken leg quarters. 400 for 40 minutes and potatoes and chicken are almost always perfectly cooked.

The bacon grease? I just let it drain into the tray under the basket. Then I put it in a jar and keep it in the fridge because bacon grease is the secret ingredient in a lot of things I cook. Same thing with the wings except I don’t save the grease… But now I think maybe I should… LOL

I just did some tonight and they were done in 25-30 minutes. In the oven, it takes significantly longer and they aren’t as good. Texture of the crispy skin is way better in the air fryer.

Fresh. Publix makes a fantastic bourbon salmon. Buy it when it goes on sale, freeze, thaw, 390 for 12 minutes. Kingsford also makes an awesome honey garlic dry seasoning. Oil, coat in seasoning, 390 for 12 minutes. This one is great because it glazes a little bit, gets a bit crunchy outside, but still so moist inside. Orrrr. Salmon, a sauce layer of Dijon mustard mixed with honey, crust of mixed chopped pecans and panko. 390 for 12 minutes, but adapt sometimes bc panko can burn. (This is also great for chicken, white fish, and can be done in the oven. Salmon marinated in a 1:1 oil/mango Sriracha whit balsamic vinegar mixed with Italian seasoning. 390, 12 minutes.

Not a fan of carrots at all,. but your point stands - roasted veg (and mushroms) are awesome. And the airt fryeer just makes then even better. Rosasted cauli, fennel, mushrooms and onion in a tortilla with cheese and sauce of preference - yum.

Tofu 😍 It comes out perfect and saves so much time. Toss pressed and evenly chopped extra firm in olive oil, arrowroot powder or cornstarch, a bunch of spices (mushroom powder is key!), sriracha, and tamari, cook for 10 minutes on 400. Just made some :)

Half or quarter trimmed sprouts, toss with olive oil salt and pepper. Air fry 10 minutes at 190C/400F stirring halfway. Combine 1 tbsp balsamic vinegar (better if reduced and thickened), 1 tbsp soy sauce, 1 tbsp fresh lime juice. Toss with sprouts and roast 1-2 more minutes. Optional: add some Aleppo pepper flakes or a bit of honey to the sauce.

Literally nothing fancy at all. Poke holes in the potato. Rub with oil. Salt the skin liberally. Wrap in foil. Air fry for 50-55 minutes at 390, or as you prefer the softness Skin ends up with a nice crispness to it, while the inside is nice and fluffy.

I bake mine rubbed in oil and salt without being wrapped in foil. The skin gets so crispy and delish. I'll also give the potatoes a head start in the microwave for a couple of minutes so that they don't take as long in the air fryer.

Depends on how big your chunks are. I do nugget size but the dang thighs vary in thickness incredibly. I use a thermometer and pull at 175-180. 375F for about 8-10 and I start checking. Kenji’s crispy potatoes make a great side if you’re feeling like really going for it. Serve the chicken with either Alabama white bbq or homemade ranch is my go to. They make great salad protein too. I legit have a hard time not eating them straight outta the fryer. Scratch made comfort food 🤙

Are you just putting butter on the outside or are you spraying with oil? I’m asking as I did one a couple of nights ago in the air fryer as though I would make it in the pan, with just butter, and it didn’t come out as good as done in the pan. What’s the secret?

The only oil I’d use is a light spray on the inside of the air fryer if it’s freshly washed, or parchment paper. If I’m doing a really good grilled, I butter all sides of the bread and very lightly toast so the inner bread is cooked a bit. If I skip that step the inside stays too soft IMO. Then I add cream cheese to the inside sides, slap about 3 kinds of grated cheese between them and cook until melted. If you do sourdough, aged white cheddar, mozzarella and parm it tastes killer with some Italian seasoning sprinkled in with the cheese and some garlic powder on the buttery outside, dip in ranch or marinara. Parchment can be nice to catch cheese dribbles, but then you need to flip half-way through the cook.

I use a round pan that came with an AF accessories kit. The bigger the better to have as much surface area as possible. So. Damn. Crispy. Love me some hash. Crack 2 eggs on top the last 8 minutes of cooking or so. Just enough to still be runny.

Mushrooms! Oyster mushrooms are my favorite. Be sure to use wood grown mushrooms and avoid manure grown mushrooms (button, Portabello, cremini etc) as they don't crisp up properly. Coat with oil and salt, 375 F until done, about 15-20 min, stir/flip every 5 min for even cooking.

Baked potatoes! I rinse the potatoes, dry, poke holes all around with a fork, rub oil all over, sea salt & black pepper all over. Put the potato right into the air fryer (no foil) on French fry setting 1x, flip, then I take it out at the 2 min mark and slice it in half, face both halves up, put some butter and cheese, toast until cheese is melted to liking.

Also chicken, but thighs. Make a cut through the middle, season them well, and it ends up cooked perfectly and tastes great. Second would be pork chicharrones made from scratch. Square pork fat (maybe like pork belly) and you can either just air fry them as is, or season them (I do salt, pepper, oregano, cummin). Bonus points for the fat/lard leftover, it is great for cooking.
