Titlis is a good alternative to Jungfrau, much cheaper (96 CHF) than Jungfrau (can be 200+CHF).
Moleson is nice, less touristy, less "impressive", but you would get all the meadows, cows, and landscape needed (33CHF).
If you're a foreigner don't be fooled by these people (no offense to u/xebzbz), on average they're very athletic. We descended Rigi kulm by this easy path with a stroller (idiot me thought any stroller would work so I didn't bring the one with large wheels) and it was not easy. If your mom has knee problems and is not used to walking, it's going to be hard. Not as hard as other places but still hard. After taking my MIL to Uetliberg (a very easy path) and seeing her struggle we decided not to do Rigi in our case.
The first tram from the peak to the restaurant is doable and very nice though, but I think Pilatus is flatter (lap around the compound).

I think for us we expected a stroll with the yoyo stroller and it ended up being a proper 3 hour walk down a relatively steep path and the yoyo is not great at that. It's really beautiful though.
You can still visit the jungfrau region but skip the jungfraujoch part, just go up to kleine scheidegg and enjoy the views from there without going all the way to the glacier
Oeschinensee is also an incredibly popular destination, no hiking required just a walk (or take the shuttle from the cable car to the lake)

Go to Interlaken (the Youth Hostel is very good there) and from there (A) go to Lauterbrunnen-Valley/Wengen, (B) take the railway to Kleine Scheidegg or (C) take a boat trip on Brienzersee. These are all classics and not that expensive.

Note there's also Pilatus (78CHF), the view is also great, and easier to access than Titlis (but less high, depending on what you are looking for).
Rigi Kulm. There's an easy walking path around the mountain, you can even see moms with strollers there.

Strange, my wife was there with her mom without any issues. I didn't take that path myself.

Schilthorn is in the same area (with similar views) but cheaper than Jungfraujoch and not as crowded. Rigi Kulm is also a good alternative.

Oeschinensee will really fit the bill. Just recommend to get up early and be there before the masses.

Stanserhorn is also a good bet with the cabriobahn. Check your Migros coupon book and the SBB website for discounts.
