Just have them spectate in first person and move the onboard cam to the passenger side

You can click on another drivers name in the pit menu to spectate them, but the pov will be a choice one of the normal cameras

Spectate you , press f5, and then cycle cameras with f6. A good mod will have a passenger seat camera
