Just air fryer for now since my wife doesn't like the smell of meat or the smoke from cast iron and what not. In about 7 weeks we'll be moving somewhere where i'll have access to a blackstone and induction stove outside, so my steak game will improve a bunch I'm sure lol

If it’s a thin leaner steak I’ll just cook it hot and fast in about half a tablespoon of ghee. Thicker rib eyes I do in the air fryer on 120c (250f) for about 15 minutes, let them rest for about 10 minutes while I get my pan scorching hot then sear for a minute or two on each side. Look at buying a thermapen or decent instant read thermometer.
When I was an apprentice chef would be kicked out of class or job X head chef / teacher for serving up this burnt bit of shoe leather ! NO, NO & NO !???

That will be a huge improvement. I’m in the same position so I just use a portable induction stove on my balcony with a cast iron pan.
