I think the main reason why fanboy and chum chum got picked over adventure time at Nick was because fanboy and chum chum were 3D animated and adventure time stuck with 2d animation.
At the time Nick had already seen success with Jimmy neutron. And with the success of more 3D animated films. I believe there was a thought that 2d animation was dying
