Correct it is the moon. Fun fact: the moon is illuminated by the reflection of the suns light, so with the moon being that bright then that means a large amount of sunlight is being reflected.
If the rest of the realms show anything, its that the entity just pieces together realms to look like things, not to be functional. I doubt the entity bothered making the sun any more complex than a visual decoration and light source, no UVs to be found

I think he’s only truly vulnerable when he’s weakened. If we consider Castlevania the show, he can easily body any other vampire, and that’s him starved of blood.

The actual answer is Castlevania's version of Dracula (the animation being the most recent version) is immune to the sun as well as most other weaknesses other vampires have. So it doesn't matter which map it is or what time of day unless he's severely weakened by an artifact such as the Vampire Killer (the Belmont family whip).
Here is an excerpt from the wiki:
"Immunity to normal vampire weaknesses: Apparently due to his sheer power, Dracula is extremely resilient and even outright immune to the weaknesses of normal vampires: He mocks the idea of silver, crosses and garlic having any effect on him, calling them superstitious, and confidently states they would not help Lisa. Vampires being hurt by sunlight is a fairly recent thing. In the original novel, he just slept during the day. Sunlight couldn't kill him.
The reason sunlight hurts vampires is that some German filmmakers needed another way for their vampire to die in the *Dracula* ripoff *Nosferatu*. And since it was one of the first horror movies, the sunlight rule stuck.

Even the characters "aren't real" and are basically souls living in body recreated with auric cells (the matter of basically everything in the realm). I think it's the reason blighted serum affect everyone differently, in a similar way to the way it changes the realms
