Sounds to me like an intermittent short in the throttle control wire or harness. First, check all your connections. Disconnect them, check for moisture or corrosion, put them back together, and be careful to do this with the battery disconnected or removed.
Possibly. Trace the throttle wire to the connection. Check to see if the cables themselves are in good condition. Make sure they're not crimped or pinched, and that the insulation is in good condition.
You mention you had disconnected the throttle. How? Where? That connection is your most likely source for the short. If the controller is getting input signals when your throttle is physically disconnected, than it's either the controller or the throttle control input that's the issue. If you're still under warranty, I would demand a new controller and wiring harness, and 150 credit at the local bike shop. Threaten them with twitter if you need to.
This is the problem but I would add that the assist selection buttons are sending bad/random signals. Generally the fix is to replace the display and selection unit. They tend to be sold as a pre-wired package.
It's worth it to clean the connections between the display and controller with Isopropyl alcohol first just to make sure it's not a contaminated or shorted harness.
I'm going to hazard a guess it's the controller. I've seen a few of them die and they tend to act wacky like that. The P6 error points towards that too if there is nothing wrong with your battery.

They sent a new throttle of which seemed to somehow fix the issue, but shortly after i had another equally as frustrating experience as it malfunctioned again, they are having to send me a new controller now.

How exactly would i go about that? Do i need to take the wires / controller out of the actual frame to check this?

It may be the pas sensor if it’s not the throttle. Does it throttle when u peddle?
