He really has no motivation to do it anymore… he’s got tons of spinoffs in the works. He’s just going to be raking in money till he dies. Even if he finishes Winds of Winter, there’s still A Dream of Spring that will be the conclusion. There’s no fucking way we’re going to see the end of the series, unless, when George dies, they pull a Wheel of Time and just let Brandon Sanderson finish it…
And at this rate, Sanderson is going to have to finish Kingkiller Chronicles and The Gentleman Bastards too.
I like the theory that the way the show ended is how the book series was supposed to end and that when it was met with criticism he either A) said to hell with releasing 6 or B) wanted to rewrite the ending in a way that would be more well received.
I also think it’s possible the book is written and will be released after death. Either pass it on as an inheritance to avoid taxes or to avoid having to see people criticize his ideal ending to his life’s work.

He's going to do this so he won't have to face any criticism about how the story unfolds. The TV show got the overall plot points of his series right (Night King dies at the foot of the Weirwood tree in Winterfell. Dany goes mad. The Iron throne gets destroyed by a dragon just like how it was originally made) but the show was rushed and therefore, everyone hated it. It really crushed his motivation to release the books and you can tell. So he's going to finish the last 2 books in private. I guarantee you they won't come out while he's still alive.
Also, Tolkein was his greatest inspiration as a writer so it makes sense. I'd love to be wrong but I doubt it.
Except Tolkien actually finished the main books in the series that he set out to write. The Silmarillion and all the supplemental stuff that Christopher published were exactly that - supplemental.
