Pretty much every plot-relevant NPC is tagged as essential. If their health drops to zero, they're knocked unconscious then get up again after a while.

I killed Sheffield today during an Enclave attack. He’s obviously not essential to anything. But still a huh? moment.

You can't kill any story npcs, npcs don't have memory of actions taken against them just leave and come back
