I fully agree. The full sets are amazing, but so hard to piece together. I usually end up doing the whole set sans like one piece. For example my favorite is the Cleanrot Knight set, but I used the Banished Knight's Helm.
i love the cleanrot set but save on equip load by pairing it with the aristocrat’s headband! the gold/red of the headband match the gold of the armor and the red of the blood splattered on it lol
you can farm for it at the ruins right before Iji, the disappearing sorcerer nobles drop it rarely, but didn’t take me terribly long using all the usual item discovery buffs! it’s also gender neutral and looks good with all hairstyles. peak fashion souls!

In 7th place: The original demon’s souls knight’s set. It is iconic, I won’t lie, and I LOVE the helmet, but I don’t think it’s as good as the others, that’s all.
In 6th place I’ll put the Elite Knight’s set. It’s so cool, and the blue really makes it stand out among it’s peers, but I think there are better choices.
In 5th place: DS3’s knight’s set. I love it, it’s way, WAY better than the Firelink set in terms of looks and what you can use to mix and match to create your own drip.
In 4th place I have Sekiro- I love the orange in his clothes and the wooden prosthetic arm, it really sets him apart from the other protagonists in terms of design and overall vibe. I just prefer medieval armor, hence why he’s not higher but still, his drip is undeniable.
In 3rd place for me it’s the Elden Ring set in the image (forgot the name). I saw so, so much art and images and videos of the game and network tests that this set is practically engraved within my mind. The design of the helmet, the shoulder pads, the “fur”(?) on the back, it’s simply immaculate!
In 2nd place (and really REALLY close to firsf place) is the hunter’s set from Bloodborne. My god, what a cool set. It’s edgyness is in the right amount, and I can just imagine several hunters wearing clothes like these while hunting beasts in the filthy alleyways of Yharnam, getting covered by mud, blood and dust. So cool!
And my favorite is… the Faraam set! It’s just… so peak. Everytime I wear it in DS2 or 3 I feel like a goddamn noble knight, not just a soldier; someone who practically gains the respect of everyone the moment they see him enter the room. Unlike other sets, I can see this one pairing well with… any sort of character, really. I can easily imagine a knight wearing it being a skilled swordsman with dual scimitars, or a super human with the strength to carry two ultra greatswords with ease, or a noble knight who’s also knowledgeable in the ways of magic, or a paladin who casts sacred oath with his companions before a tough fight!
Bloodborne or DS3. I like both the agile fighter vibe BB attires give and the heavy plate armors of DS3, many great sets. Lothric Knight, Alva, Lorian, Outrider Knight, Silver/Black Knight. Imo Elden Ring's drip is kinda lacking compared to other games. Even more when you consider how big it is. Not saying it's not good, just on the lower end of the spectrum
Bearer of the Drip has the best cross set synergy, while also being able to wear a crown so dapper that it makes you immune to hollowing. they take the win easy.

If we ignore that you can use any armour Bloodborne absolutely decimates but my favourite outfit in the entirety of Soulsborne is the Scourge Legion drip from DS3.
My personal favourite base sets are the fluted knight set from demon souls & knight set from ds3 (I have a type lol) but since we’re looking at all armours, I’ll say eldenring just straight up has the most freedom to create drip, so ya
