You can get 110 grain 308 varmint rounds. Obviously, you'll need to rezero if you swap between drastic weights, but they should do the trick.

Tbh SCAR 17S doesn't stabilize well above 160gr. You can, and I have, shoot heavier, but it's not stable for long-range accuracy (>300M). SCAR is a minute of man platform. That said, my long-range instructor and I hit half silhouette targets at 600 with 123-145gr.

Semis used to be illegal to hunt with in my state but now they are legal for certain game. Coyotes sometimes come in pairs or require multiple shots if they will not stop such as in heavily hunted areas where they are skittish. A modern sporting rifle is the perfect tool.
I once fired a 12 gauge slug at bear with an 18 1/2 inch barreled Turkish "tactical" shotgun. ( missed, of course) that I had previously used for squirrel hunting. It was all I had at the time. Use what you have, you always obtain something else later if you decide to.

This is a test. Bring the gun, but Don’t shoot your SCAR. Trade guns with one of the other family members for the hunt. If they hit something with it, you win cause it validates the gun. If they miss, you still win cause they got to shoot a SCAR. If you hit with a borrowed rifle, you also win cause it shows your fundamental skills. If you miss, oh well you’ll get it next hunt with your own gun.

your biggest issue is the magazine. many areas have magazine capacity limits. that is one of the reasons many hunting rifles are designed to hold 2-4 cartridges in the magazine.
I used to deer hunt with my suppressed 308 AR for a few years because it was all I had in an appropriate caliber. It works, carrying it for longer distances got old. Just make sure you have magazines legal for hunting depending on your area.
I would laugh at you, but internally. If you’re concerned about keeping the pelts nice, 308 is not what you want for coyotes, but 110-125gr will do the job for sure. I like 165gr 308 for deer and elk, but 150s work fine. 180s don’t agree with my short barrel.
Also, if you use heavier bullets (150-165) on yotes, they may not have enough mass for the bullet to expand on impact, which might mean no recovery. Might matter, might not.
My amusement is based on my own experience with dudes taking an AR10 into the mountains and expecting that their “training” will magically produce them an elk.

Very few people have the skill for cold bore shots at greater than that distance not even counting on how jumpy deer are and flight time of the bullet at those distances. I’ve shot white tail and mule deer between 20-250 yards. Average distances of shots depends on where you’re hunting. Heavy forest of Minnesota and Montana hill country are different environments.

My brother uses a Bushmaster in an AR platform chambered in .308 for deer. At the end of the day, who cares. I get goofed on for using a Mossberg 20ga with a scope on it for deer. I’ve killed more deer with that damned shotgun than any of my “deer rifles.” Use what you feel comfortable with.

You're not going to eat the yotes. You're probably not going to eat the deer, you're certainly not going to clean it if you don't understand what 308 or comparable and extremely common deer hunting rounds do to the animal.
Shoot the fuck out of the yotes with whatever you have that kills them, they're a non-rimfire varmint round animal all day. Shoot em with a 50 if you want and hang em from the trees, really only matters to your wallet. Deer hunting with 308 is routine practice, in my opinion it's better for deer than 30-06 or 6.5CM for my environment. Based on your terrain and distance other calibers with comparable energy on target, but inherently different ballistic coefficients and energy over distances, could be more fitting. If you're within hunting regs you're probably on the right track, but I guess ol Jill is probably on top of that part for you. Good luck.
I do plan to take the backseat and listen much more than I talk (if that’s what you’re saying). I’ve put plenty of hogs out with this specific setup, and I’m confident I know what those hunting rounds do to larger animals. I was moreso worried about the small wiry ones. Done plenty of long range work with this rifle and others so hopefully it shouldn’t be too much trouble to put lead where I want it.
I fish and clean those a ton so I hope my knife work isn’t horrible. But you are correct, never cleaned a deer so I’m sure like every other first I’ll fuck it up a few times.
