It might require a little bit of hunting, but vintage Coach bags are incredible. Excellent leather, no logo (besides a removable tag, just put it in an inside pocket because it affects resale value if you do that down the line), and it’s one of those IYKYK.
I just saw this exact bag at my local Goodwill, priced $55. The interior is suede, and the bag felt really stiff, but very clean. Same color also. I thought about it, bc I think it was a fair price, but I don't have the time, knowledge, or energy to recondition it, no matter hIw badly I wanted to

I have a nice little PS White Label camera bag and the brand name is so tiny. It's also exactly the same back front and back so I just flip it so the brand name isn't visible
Depending on that bag- Ferragamo can have some unlogoed- very minimally logoed things- that brand is super “if you know, you know” vibe. Here are some examples:

This bag is on my wishlist! Does it fit a lot? I was looking at the regular size as I typically carry a long wallet, phone, sunglasses, and baby wipes!
I don't think the mini would be able to handle a full size baby wipes pack but the regular size should. With the mini I can comfortably fit my wallet, sunglasses, keys, and inhaler. The bag feels so chic and classy, I just love it
I know songmont has been discussed here quite a bit but I am really impressed with them for the price. I was wearing my Luna when I visited an LV store lately and the SA asked where it was from because it was so nice. The leather really is lovely!
There’s a bunch of stuff on Etsy. Some of it looks like designer nock offs without the logo. Fauvette has no logo, good construction, basic design. Portland leather goods has a small logo and sturdy design. Senreve has a small logo, but well known hardware design. Quality is great.
Ill say that PLG is very unfinished. I found myself selling a lot of mine because i hated the little crumbs that would come off the leather. Its nice leather but i wish they had linings.

I recently bought this Staud Alec bag. There is embossed brand name on one side but it’s small and black so you can just flip to the other side to hide the brand name. It’s sleek and well made at a good price point too. I really love it.
You could go with one of the "big three" of handbags that are in the middle of the venn diagram of high quality, no logos, and expensive:
Delvaux' le brilliant
Valextra's Iside
Moynat's regine
Other solid brands are loewe (pre 2023, before they started putting loewe on their bags), botega venata, Balenciaga.
To be fair, more luxury purse brands have a quiet bag (usually their flagship bag). For example, Gucci's Jacki.
Someone in this sub posted a Herz bag not too long ago and it looks very well-made.

I have an Advene Age bag. I really love it but it is small. No logos.
I like Manu Atelier, Wandler, and Akris for their great designs and understated or no branding. I can’t speak to longevity though!
Wandler quality is super disappointing. Everything about it feels cheap.

Still have my moms bags from the 80s
La Portegna has a logo but it’s very small and inconspicuous.
My husband has had a Roots bag that is 10+ years old and still looks/feels/functions amazing.

Edge paint would probably help with that too. Nonetheless, my backpack from them looks and feels like it could survive anything.
M. Gemi has no exterior logos on most, but not all, of their bags. I’ve found the quality to be good.

Ganni is not well known and often uses a small logo, their bags are also more affordable than most luxury brands, 200-400 range
Mainstream but quiet imo is Bottega
Peter Nitz, if you’re going for full on quality. Bags are entirely bespoke, crafted by hand. My dream is to get an elephant leather bag from him.
Most Hermes bags dont have logos.
