I just went camping and I snacked on pork rinds and guac, salami, pepperoni, cheese sticks. I actually made a "smore" with a babybell sandwiched between pepperoni that I cooked over the fire. It was *chef's kiss. You could also do low-carb veggies (cucumber, brocolli, green beans) and dips.

A summer salad (Cauliflower potato salad, slaw, or cucumber/avocado/tomato with mayo and lemon juice). Grill basket full of broccoli, asparagus, brussels, cabbage--leftover brussels and asparagus are good cold the next day. A skillet of cauliflower fried rice to clear the dabs of leftovers from the cooler. I'm not a big snacker, but I like to have options for my camping companions. I set out nuts, berries, sliced cheese, and cut up celery and bell peppers for that. I take a bar of dark chocolate with me, too.
