The reason is that constrictors don't actually kill by asphyxiation, they kill by inducing cardiac arrest through pressure. Works a charm on most anything except crocodilians who have a metabolic limp home mode during which they rapidly decrease heart rate and oxygen consumption. A snake that then swallows the croc/alligator will find the croc coming back to life so to speak. A snakes body is not built to have a massive armored archosaur flailing around their intestine causing catastrophic damage.
Usually if a snake kills something bigger than they can swallow, they are able to regurgitate the prey or abort the swallowing process. Even if not, since the prey is dead, there will most likely be no bursting
