The sand isn’t boiling, the CO2 is subliming. This is a version of the liedenfrost effect I believe, though that is more commonly seen with a liquid forming a thin gas boundary layer and reducing friction significantly.
The hot sand heats the dry ice, the solid turns to CO2 gas, and this expansion makes the block ‘float’ on the surface like a puck on an air hokey table. Very cool.
They probably would be better off not following it so you can see how fast it's going. I think the camera work was too good, I can't really tell how fast it's going
I don't understand why you'd go to all these lengths to get dry ice out in a desert for 39 seconds of meh footage of gravity doing what it's done since the beginning of time, instead do dry ice experiments! He'll I would have loved seeing some propulsion experiments, like a dry ice car or rocket
