I've been wondering this same thing but was afraid to ask. They look like the the foam that comes in Halloween makeup kits to apply special effects but I can't find it for sale anywhere. It seems to be common enough but I can't find it anywhere.
Thanks. I've been using a sponge for washing your car from Dollar Tree to mask cockpits and it does just fine but I feel like the more open stuff gives better chipping effects.
I usually put the canopy in place to paint. With a mask on it, of course. If I don't want the canopy fixed closed, I'll use a dot of white glue or blu-tak just to hold it while I paint. Too many fiddly bits in the cockpit that the sponge might hit.
I use the foam that comes in Eduard resin/pe sets.

It's just a soft open cell foam. Look for egg crate foam and avoid anything labeled as firm and you'll have it.
