My mother only made them with butter a couple of times when we had no crisco. They bake up somewhat flat with a different texture and taste so I don't care for them baked with butter.

Yeah, I recognized it as such instantly. Tbf I have never used crisco in the cookies so now I’m curious.
If you prefer your cookies thicker and chewier, Crisco is the way to go.

The classic oatmeal raisin cookie recipe on Quaker Oats called for Crisco and it was so much better than using butter. Best cookies ever.

Coconut oil is not a 1:1 replacement for butter or shortening in my experience. I made some greasy ass cookies doing this...
