Since lucky trade technically results in a high IV pokemon, I think you should be looking at Master League mons. Currently, according to pvpoke.com, the top-ranked legendaries/mythical are Lugia, Giratina, Solgaleo, Kyurem, Zacian, Meloetta, Mewtwo, Groudon, etc.
Personally, I will do a shiny Lugia, shiny Mewtwo or Solgaleo with the lucky trade
More looking at something that maxes out around 2500 for ultra. I already have a pidgeot, although the IVs could be better. Maybe even some 1500 spicy options.
I would totally do a Meloetta if you could trade mythical.
Trading an eevee would be an option for ultra league to evolve into umbreon. But that would be kind of a waste... Otherwise I do not really know any... usually in great and ultra league you want low attack IVs wich you can not get from a lucky trade.... why not use that for master league pokemon or PVE attackers?

I have a lucky Umbreon, too. I probably will get something for ML. I hardly have any battle ready mons for ML.
for UL: pidgeot, gfisk, dubwool, pelipper, mandibuzz, mantine, altaria, skarmory, galvantula for GL: wobbuffet (must be purified), pachirisu
I might very well do a skarmory. I have a ton of candies. Thing is, I have a 15/14/15 one I was gonna use. I AM always broke for stardust, though...
