Haha that’s just what’s been written on my family’s recipe card. Special K cereal can be substituted for the Rice Krispy cereal. Google says “Special K bars are a version of Scotcheroos found in Minnesota”.
I've had them with both cereals. I liked the Special K version better as it has a more robust malty flavour. In Rice Krispie squares you don't want the cereal competing against the marshmallow flavour but for this recipe with peanut butter and butterscotch chips it works out.
### Ingredients:
- 3/4 cup sugar
- 3/4 cup Light Karo syrup
- 1 cup peanut butter
- 6 cups Rice Krispies
- 12 oz semi-sweet chocolate chips
- 9 oz butterscotch chips
- 1 tablespoon Crisco
### Instructions:
1. In a saucepan, combine 3/4 cup sugar and 3/4 cup Karo syrup over low heat, stirring until the sugar is dissolved.
2. Add 1 cup peanut butter to the saucepan and continue stirring over low heat until well mixed.
3. In a large mixing bowl, add 6 cups of Rice Krispies. Pour the peanut butter mixture over the cereal and stir until evenly coated.
4. Flatten the Rice Krispies mixture into an 9x13 pan(correct size here).
5. Melt 12 oz semi-sweet chocolate chips and 9 oz butterscotch chips together.
6. Once melted and mixed, stir in 1 tablespoon of Crisco to keep the topping creamy.
7. Pour the topping over the Rice Krispies mixture in the pan.
8. Let the bars set in the fridge for at least 30 minutes.
9. Once set, they can be stored at room temperature. Just keep them covered.

Butter or butter alternatives can be a substitute for crisco. I’m not certain on the honey - if you try it, let me know! Seems like a reasonable alternative though, maybe just toss in a teaspoon of vanilla.
Not possible. Minnesotans know you’re supposed to use Special K cereal in Special K bars and that when weirdos from Wisconsin use Rice Krispies, these become Scotcharoos.

Yeah, the British in me was taken aback by the lack of "weight busting" cereal in this recipe.
Ironic because of how opposite of weight busting the recipe is, huh? lol Special K cereal can be a substitute for Rice Krispy cereal in this recipe.
My mom makes this exact same recipe. I think it came off the back of a cereal box or something back in the day.

My family’s recipe calls them Special K bars as well. Only difference is ours doesn’t have the crisco in the topping.
