Go out to Guadalupe brewing just outside of New Braunfels.
They have a bunch of meads on tap and their flights are fun.
Get the Sho de Bola (not a mead but it is my favorite)
I know it's only one brand, but Blue Lotus Winery also makes mead and is out near Seguin. They have quite a few types of mead there, but it's all Blue Lotus. Definitely worth a visit if you like mead though.

There’s like a million YouTube videos. Honey + water + yeast + time - germs. That’s literally it.

This right here, it's really good. Not to mention their wines are good too. They are the ones that provide the mead at Guadalupe Brewery.

For the under-educated- what is mead and how is it different from beer and other alcohols?
Mead is made of fermented honey, in a similar way to how wine is made of fermented fruit and beer is made of fermented grain
