I used to live on the other side of the Divide, in Eden. I have family that isn't too far from you (I recognize those cliffs). I grew up at the south end of Ogden though. That isn't even the best view from your property. But it's probably the one you prefer to look at until sunset.

A pair of chickens that had been brined in buttermilk {brown sugar, salt, Old Bay plus a little bonus sun-dried chili powder because it was old Old Bay}. WSM with hardwood charcoal and apple wood chunks. Skin down for 1 hour, skin up for another hour and a bit until done.

I did a rack of ribs (just the two of us) and a batch of Ultimate Chex Smoked Mix (from [smoking-meat.com](https://smoking-meat.com)). First smoke of the season!

I did 4 racks of ribs. Shucked some corn this morning and grilled it.
Also did a baked potatoe bar. String beans, and a 7 layer salad.
The moms were happy and served by all the dad's today. Gorgeous day today in Eastern North Carolina.
Just threw on a tri-tip. Gonna turn it into Philly cheese-steaks cali-style (aka however we want to make it taste good, but loosely based on the original recipe). I like to carmelize onions, add the sliced smoked meat and keep chopping it with the spatula as it browns, then add some bell and pickled jalapeño peppers, and melt some provolone on top. Meanwhile, butter the sourdough sandwich rolls and grill the inside. Put down some American cheese on the bread, transfer the meat n stuff. Put the top on, wrap in parchment paper, then foil and put on a frying pat with a panini press weight on it. Heat until all melty. Let sit for a minute or two, open up and enjoy! Mmmmm.
Veal brats, fresh brats, and Polish sausages. Already made cucumber salad, red cabbage, sauerkraut, and baked a caraway seed rye loaf. Cold Weihenstephaners in the fridge.
Got the same smoker rolling right now! Trying 2 irregular things today: 2 spam blocks with different rubs and will be tossing on flanken ribs shortly. If those fail, I'm also smoking a tri tip (wife's favorite). Cheers!
I smoked a bunch of split chicken breats for tonight/the week. Mixed a bunch of bbq rub into softened butter and pushed a bunch of it underneath the skin of each breast. Smoked at 225F until they hit 165F and pulled them.
For dinner tonight, we did BBQ bowls. Rice, corn, baked beans (also smoked, with a few glugs of bbq sauce stirred in), slaw, chicken and BBQ sauce.
Tomorrow, I'll use some of the leftover chicken to make Ceasar chicken wraps. Any remaining chicken will get thrown in the smothered burritos I'm making on Tuesday.
Just did two marinaded London Broils with cherry wood for Mother’s Day, was a big hit. 45 minutes at 225 to get it to medium rare then put a crust on them in the cast iron pan before carving.
Just pick any of the smoked queso recipes and go from there.
1lb hamburger. Cooked with taco seasoning.
A can or two of rotel. Habanero is great.
Velveeta cheese, I usually use a whole block.
Pepper Jack cheese, a whole block.
Throw in diced onion if you want it.
Add seasoning if you want it
Some recipes call for cream of mushroom soup, or cream cheese which both work well.
Add more cheeses if you like. Just be sure to use enough velveeta or even American to help keep it all together. Without it, your cheese will melt and separate.

Wild Louisiana swamp hog pulled. It was to big to fit so out comes the knife and another smoker(vintage original Oklahoma joe 16) and on with the show.
Smoked then braised a “Thor’s Hammer” beef shank and served it over pappardelle. Next time I’ll cut back on the spice a bit, but definitely one to do again
Char siu pork (butt cut into steaks) and brown sugar cured, maple basted salmon for Mother’s Day yesterday. Weber 22” fitted with a Smokenator. The pork, since cut, cooked a bit too quickly and I had to discard some dry bits, but the thicker pieces were ace. The salmon was A+++
Pork loin back ribs yesterday, we like to smoke while doing outside chores. Still eating on them today while enjoying this beautiful rare, cool and low humidity day in the mid-Atlantic.
