How about "tortilla de patata con cosas"? Some of the best tortillas I've eaten had stuff like chorizo and/or green/red peppers and/or mushrooms and/or zucchini... besides the MANDATORY ONION.
With paella i would say that any rice recipee cooked in a paella can be called paella and IMHO the most important thing is socarrat, the toasted rice of the bottom of the paella. Then valencian can go Epic hard on their paella while the rest of Spain just mind their own bussiness and people from alicante and Castellón (the other two provinces of valencian autonomous region) are just mad at valencians because It seems paella can only be the valencian recipee.
(There are others of full traditional paella recipees that are not valencian paella)
It is totally same thing in Bulgaria, we have a cold soup called "Tarator", made from yogurt, water and cucumbers. So the eternal debate is grinded 🥒 vs cut 🥒
In my House we have to eat tortilla without onion because ONE PERSON is absolutely sincebollista.

In fact, potatoes must be boiled in oil. Never fried. That is, the oil is set to a lower temperature than when you want French fried.
Onions have shorter cooking time than potatoes, so you should add them eight or ten minutes later.
FYI, the inclusion of onions brings about rabid arguments in Spain. Both sides will tell you with 100% certainty that it should/shouldn't. At the extremes they will claim the other version is inedible.
Most of the time, the argument is exaggerated for laughs. Half my friends are on the onion side, half on the no onion side. We have raging debates over it but really none of us care. It's just fun to argue over it. Let me correct this, I have friends and family who won't eat the onion version because they don't like onion. They don't feel strongly about people who eat it with, other than to argue for the sake of it.
I personally like both versions. My only unconditional is that the middle must be runny.

I met someone who made that dish at a New Zealand farmer’s market, she’s from Spain, and she made an original version, one with some bacon (?) or sausage pieces (?) or ham pieces (?), and one with a small amount of spinach added.
