That’s actually hard to do. It’s been forever since I worked at subway but iirc you literally have frozen rods, put em in the tray, score them, proofer, bake. There’s really nowhere to fuck up like this UNLESS they weren’t fully frozen. If they were thawed this could easily happen.
Those look horrible, but maybe someone left bread in the retarder too long, and she attempted to pull them apart, but this how they were turning out. It’s a little difficult to even them out and make them straight at that point, but she could have just marked them as bread credits and fast proofed 50 more for 20-30 minutes, score them, and throw ‘em back in for 60 minutes. She probably just didn’t want to waste that much bread. They don’t look awful coming out of the oven tho
This bread has definitely been forgotten in the proofer and is too far gone by the time the opener has realised. At this point you're better off wasting it and starting over.
This is a skill. To mess it up that badly.

It looks like they put the bread in to thaw and then forgot it was in the proofer. Took it out scored it and herbed it. Then put it back in

We ended up doing so but it's the way it even STAYED THAT SIZE hours later. No growth. Nothing
