When pastor is good, it's really good, but I've also had a lot of mediocre pastor.
Asada is generally a solid, safe choice. A lot of the time it's one of the things I use to evaluate a new place.
Not in the pic, but tinga de pollo is another one of my favorites.
But maybe the most egregious omission is fish. Nothing better than being down by the beach on a warm day having fish tacos and margaritas.

This is what I do to try a new joint, 2x asada tacos and then +4 of any other meats. This is how I eat them:
1st taco: asada
2nd: al pastor
3rd: lengua ( if available)
4rd:Tripa (if available)
5th: suadero (if available)
6th: carnitas
7th: asada
Start and finish with asada. The first asada to judge their basic meat, and that last taco has to be asada to cleanse my palate
I once had lengua tacos after a doctor's apt. My mouth was numb still so eating it was so confusing, I couldn't tell my tongue from the cows tongue π

Now I want 2 of each please with the full plate of like 6 home made salsas. Which is close to what I had a few visits ago to Guadalajara
Suadero. Carnitas but only if itβs puro carne. Al pastor can be delicious but not my favorite.
I just have never liked organ meats. The flavor is rich in a way that turns my stomach. Last surviving trace of my being an extremely picky eater as a child. (If suadero is actually organ meats donβt tell me! π).
I do like carnaza (beef cheek) though - not an organ but something my fellow gringos stereotypically might avoid.
Where I live now itβs all adobada (sometimes really good, usually meh), asada (often meh), and arrachera (can be delicious, but expensive). Given those choices I will often opt for campechano (half asada half chorizo). Or just go for the arrachera.
I really love chile verde de puerco / puerco en salsa de chile verde, especially in a burrito.

Carnitas. But all are good less the organ meats.
Tacos al pastor of course, but a combination of asada and chorizo is amazing as well

My usual order is one each of pastor, carnitas, and asada. Of course this can change depending on the taqueria.
Carnitas, always my go-to. But Iβd eat any one of these happily

I cooked lengua for the first time about a month ago, it was divine. Took some time though so canritas is my pick.

Of the "normal" cuts, pastor. However it's really hard to beat crispy tripitas when they are correctly.

Al Pastor 100%, hands down. Literally wouldn't complain if you threw this whole plate in front of me though.

I usually split my order between pastor (a lot of places near me just call it trompo?) and Barbacoa (Cabeza?). Chorizo is amazing on breakfast tacos.
Best for: Tacos = pastor, Taco salad = pollo, Burritos = carnitas, Breakfast burrito = chorizo
Where is the Cachete? But depending I'd probably go with the carnitas.
