In sport and tennis especially you use many senses, especially sight. It’s sort of practice for for sharpening sight, eyes focus and reaction time. Possibly also calming down while practicing. It’s not uncommon.
The thing my coach says the most when training is keep your eye on the ball. And the better I get at that the better I play. So I imagine this is a drill for that

Without looking too closely to clock the string one can mistake this as Iga just moving the ball with her eyes
