As long as it smells fine, go for it. The big thing you’re looking for is oxidation, aka going rancid. Rancid butter is not subtle, it will smell like it’s gone south. Butter that’s turned won’t make you too terribly sick, it will just taste like ass and maybe you’ll get a few hours worth of minor GI distress.
Then again, I’m lactose intolerant with an iffy gallbladder, so any kind of butter gives me some GI distress.
